Ingredients
- 2 lbs. chicken cutlet, thin cut
- 1 yellow onion, small and chopped finely
- 3 to 4 garlic cloves, chopped
- 28 oz. can fire roasted tomatoes, diced
- 1/2 lb. smoked mozzarella, thinly sliced
- 1 tsp red pepper flakes, crushed
- 1/2 cup Parmesan, grated
- 1 cup fresh basil leaves, shredded or torn
- 3 tbsp olive oil
- Salt and black pepper, to taste

Preheat a grill over high heat.

Season the chicken generously with black pepper and salt. and then drizzle with olive oil.

Cook the chicken for a couple minutes per side and then transfer to a platter covered with foil or work in batches and cook the chicken.

In the meantime, prepare the sauce: Over medium heat in a medium pot, heat 2 tbsp olive oil. Add in the onion, garlic, and crushed red pepper flakes; cook for 10 minutes, stirring every now and let. Add in the tomatoes and cook for a couple more minutes, until heated through. Wilt in the basil and then season the sauce with black pepper and salt.

Preheat your broiler over high heat.

Layer the chicken with tomato sauce in a large sized casserole dish. Top with mozzarella and Parmesan.

Brown the casserole under the broiler until the cheese is completely melted, for 3 minutes.
