Rhubarb Bars from Bible Study

Ingredients

  • CRUST:
  • 1 1/2 c oatmeal
  • 1 1/2 c flour
  • 1 c. brown sugar
  • 1/2 tsp soda
  • 1 c shortening or coconut oil
  • 1/2 c chopped walnuts
  • FILLING
  • 3 cups cut up rhubarb
  • 1 1/2 c sugar
  • 2 TBSP cornstarch
  • 1/4 c water or less
  • 1 tsp vanilla

Directions

  1. Dissolve cornstarch in water. Mix and cook all ingredients until thick.

  2. Assemble crust until crumbled and pat 3/4 of mixture into 9X13 pan, greased and floured.

  3. Pour in rhubarb mixture. Sprinkle remaining crumbs on top. Bake 375

  4. 30-35 minutes
