Ingredients
- CRUST:
- 1 1/2 c oatmeal
- 1 1/2 c flour
- 1 c. brown sugar
- 1/2 tsp soda
- 1 c shortening or coconut oil
- 1/2 c chopped walnuts
- FILLING
- 3 cups cut up rhubarb
- 1 1/2 c sugar
- 2 TBSP cornstarch
- 1/4 c water or less
- 1 tsp vanilla
Directions

Dissolve cornstarch in water. Mix and cook all ingredients until thick.

Assemble crust until crumbled and pat 3/4 of mixture into 9X13 pan, greased and floured.

Pour in rhubarb mixture. Sprinkle remaining crumbs on top. Bake 375
