Granny’s Weetbix Biscuits

Can add optional extras eg: chopped dried apricots, ginger, nuts if desired

Ingredients
- 1/2 C butter, softened
- 1/2 - 3/4 C sugar
- 2 t golden syrup
- 2 drops vanilla essence
- 3 Weetbix, crushed
- 1 C self-raising flour
- pinch salt
- 1/2 C coconut
- 125 gr chocolate chips
- 1/2 t bicarb soda
- 1 1/2 T boiling water
Directions

Beat butter and sugar, add vanilla.

Melt golden syrup, add water and bicarb of soda, then stir into butter mix.

Combine flour, salt, coconut, weetbix and choc chips and add to above mixture, mix together.

Place spoonfuls of mixture on paper lined tray.

Bake at 160oC approx 10 mins or until golden brown.

Cool on tray.
