Fresh No-Bake Fruit Pie

Ingredients

  • 1 lb. strawberries, hulled and large berries cut in half
  • 2 cups blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 1/4 cups water
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 9-inch prepared shortbread pie crust

Directions

  1. Put all berries in a bowl and stir gently to combine. Transfer 3/4 cup to a small saucepan with 1 cup water and the sugar. Bring to a boil, then reduce heat to medium-low. Use a fork to stir cornstarch into remaining 1/4 cup water in a small bowl until smooth; pour into hot berry sauce and stir until thickened, about 2 minutes. Remove from heat and let cool completely, stirring occasionally, about 20 minutes.

  2. Pour thickened berry sauce over fresh berries; stir gently to coat. Pour into pie crust. Chill until cold, about 1 hour.
