Air-Fried Italian Stuffed Tomatoes

Ingredients

  • 4 tomatoes
  • 1 cup cooked brown rice
  • 1/3 cup grated Parmesan
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped toasted walnuts
  • 1 tbsp chopped fresh basil, plus more for garnish
  • 2 garlic cloves, minced
  • 1/4 cup Italian-seasoned bread crumbs
  • 1 tbsp olive oil

Directions

  1. Cut tops off tomatoes. Use a melon baller to scoop out flesh, leaving 1/4 to 1/2-inch thick sides and bottom. Discard flesh and tomato tops.

  2. Stir together rice, Parmesan, goat cheese, walnuts, basil, and garlic in a bowl. Fill tomato shells with rice mixture. Stir together bread crumbs and oil in a bowl, then sprinkle over rice mixture.

  3. eheat an air fryer to 370. Coat fryer basket with cooking spray. Arrange tomatos in basket; cook utnil tomatoes are tender, filling is heated through, and topping is golden brown, about 15 minutes. Garnish with additional basil.
