Put a chicken breast, smooth side up, on a work surface. Holding it down with one palm, slice breast horizontally, stopping three-fourths of the way through. Open breast like a book; spread salsa on one half, then close the “book.” Coat with cooking spray and sprinkle with salt and pepper. Top with more salsa, then bake at 425 for about 30 minutes.
