Ingredients
- 16 oz. rotini
- 6 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1/2 cup crumbled feta
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 fresh tomatoes, chopped
- 12 oz. fresh asparagus, trimmed and chopped
- 2 medium carrots, chopped
- 1 cup sliced green onion
- 4 garlic cloves, minced
- 1/4 cup chopped fresh basil
Directions

Cook pasta as directed. Drain, rinse under cold water, and drain again.

Meanwhile, whisk together vinegar and oil in a large bowl. Stir in feta, salt and pepper.

Add pasta, tomatoes, asparagus, carrots, green onion and garlic; toss gently to coat. Chill, covered, at least 1 hour. Stir in basil just before serving.
