Rotinin Pasta Salad

Ingredients

  • 16 oz. rotini
  • 6 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1/2 cup crumbled feta
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 fresh tomatoes, chopped
  • 12 oz. fresh asparagus, trimmed and chopped
  • 2 medium carrots, chopped
  • 1 cup sliced green onion
  • 4 garlic cloves, minced
  • 1/4 cup chopped fresh basil

Directions

  1. Cook pasta as directed. Drain, rinse under cold water, and drain again.

  2. Meanwhile, whisk together vinegar and oil in a large bowl. Stir in feta, salt and pepper.

  3. Add pasta, tomatoes, asparagus, carrots, green onion and garlic; toss gently to coat. Chill, covered, at least 1 hour. Stir in basil just before serving.
