Ingredients
- 8 eggs
- 1/3 cup sour cream
- 1 cup shredded mozzarella
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp butter
- 2 tbsp minced fresh basil

Whisk eggs and sour cream in a bowl until creamy and smooth. Stir in cheese and season with salt and pepper.

Melt butter in a large skillet over medium heat. Pour in egg mixture; cook, gently folding occasionally with a spatula, until eggs each desired consistency, about 3 minutes. Fold in basil during the last minute of cooking, or sprinkle on just before serving.
