Ingredients
- 2 limes, zest and juiced
- 1/4 cup chopped fresh mint
- 1 tbsp brown sugar
- 1/4 tsp kosher salt
- 3 lbs. watermelon
- Additional mint, for garnish
- Lime wedges, for garnish
Directions

Place the zest, mint, brown sugar and kosher salt on a cutting board and chop together until it forms a paste. Transfer to a small bowl and whisk in the lime juice. Cut watermelon into wedges. Arrange on a platter and spoon the mint mixture over the top. Garnish with more mint and serve with lime wedges.
