Ingredients
- 2 tbsp lemon juice
- 1 tsp honey
- 1 tsp Dijon
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
- 5 oz. arugula
- 3 cups cantaloupe, chopped
- 1 cup goat cheese, crumbled
- 1/3 cup toasted unsalted shelled pistachios
- 1/4 cup fresh basil, torn
Directions

Whisk lemon juice, honey, Dijon, salt and pepper in a large bowl. Slowly whisk in olive oil. Add arugula and cantaloupe and toss to coat. Top with goat cheese, pistachios and basil.
