Mini Lasagna Cups

Ingredients

  • 1 cup ricotta
  • 1 cup mozzarella, shredded
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped parsley
  • 1 egg
  • Fresh pasta
  • Marinara
  • Parsley

Directions

  1. Mix ricotta, mozzarella, grated Parmesan, chopped parsley and egg. Cut out 12 4×6-inch pieces fresh pasta. Spoon 1 tbsp marinara into each of 12 muffin cups. Press 1 piece of pasta into each. Top with the cheese filling and drizzle with more sauce. Fold in the overhanging pasta; dab with water to seal. Top with more sauce, mozzarella and Parmesan. Bake at 400 until browned, 15 minutes. Top with parsley.
