Charred Corn Guacamole

Ingredients

  • 3 ripe avocados
  • 4 ears of grilled corn
  • 2 serranos, seeded and diced
  • 1 red onion, diced
  • Juice of 1 lime
  • 2 tbsp canola oil
  • 1/4 cup cilantro, chopped
  • Salt and pepper

Directions

  1. Mash avocados slightly with a fork. Add the kernels from the corn, serranos, onion, lime juice, canola oil, cilantro and salt and pepper to taste; gently stir to combine.
