Tomato Jam

Ingredients

  • 3 lbs. tomatoes
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tbsp cider vinegar
  • 1/2 tsp kosher salt
  • 1/4 tsp ground coriander
  • 1/4 tsp cumin
  • Juice of 1 lemon
  • Cheese and crackers, for serving

Directions

  1. Score an X in the bottom of tomatoes and cook in boiling water for about 30 seconds. Drain, transfer to a bowl of ice water, then peel and dice. Combine the tomatoes with sugars and vinegar in a large pot over medium heat. Add salt, coriander, cumin and lemon juice. Cook, stirring, until thick, about 1 hour; let cool. Serve with cheese and crackers.
