Zucchini-Onion Dip

Ingredients

  • 1 sweet onion, finely chopped
  • 2 tbsp vegetable oil
  • 1 medium zucchini, finely chopped
  • 1/2 cup mayo
  • 1/4 cup dill, chopped
  • 1/4 cup scallions, chopped
  • 2 tsp white wine vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp granulated garlic
  • 1/2 tsp kosher salt
  • 1 1/2 cups sour cream
  • Salt
  • More dill, for serving

Directions

  1. Saute onion in oil in a medium skillet over medium-high heat, until browned and very tender, 20 to 25 minutes; let cool. Puree zucchini in a food processor with mayo, dill, scallions, vinegar, onion powder, granulated garlic and salt. Stir in sour cream; season with salt. Stir in the sauteed onion. Top with more dill.
