Ingredients
- 1 sweet onion, finely chopped
- 2 tbsp vegetable oil
- 1 medium zucchini, finely chopped
- 1/2 cup mayo
- 1/4 cup dill, chopped
- 1/4 cup scallions, chopped
- 2 tsp white wine vinegar
- 1/2 tsp onion powder
- 1/2 tsp granulated garlic
- 1/2 tsp kosher salt
- 1 1/2 cups sour cream
- Salt
- More dill, for serving
Directions

Saute onion in oil in a medium skillet over medium-high heat, until browned and very tender, 20 to 25 minutes; let cool. Puree zucchini in a food processor with mayo, dill, scallions, vinegar, onion powder, granulated garlic and salt. Stir in sour cream; season with salt. Stir in the sauteed onion. Top with more dill.
