Ingredients
- For the filling:
- 5 oz. package soft garlic-and-herb cheese
- 1 canned artichoke heart, chopped
- 1 1/2 tbsp parsley, chopped
- 1 1/2 tbsp dill, chopped
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper
- 2 cups spinach
- For grilling:
- Remaining lemon oil
Directions

For the filling: Mash half the garlic-and-herb cheese, artichoke heart, parsley, dill, and lemon zest in a bowl. Whisk lemon juice and olive oil; season with salt and pepper. Brush the pounded chicken with half of the lemon oil; top with spinach and the filling and roll up.

For grilling: Brush with the remaining lemon oil, then grill as directed.
