Thai Summer Roll Stuffed Chicken Filling

Ingredients

  • For the filling: 1 oz. rice vermicelli
  • 1 tbsp vegetable oil
  • 1 tbsp rice vinegar
  • 1 tsp lime zest
  • 1 tsp Sriracha
  • Pinch of salt
  • Juice of 1 lime
  • 2 tbsp vegetable oil
  • Salt and pepper
  • 1 carrot, cut into matchsticks
  • 1/4 red bell pepper, sliced
  • 1 scallion, sliced
  • For grilling: 1/4 cup sweet Thai chili sauce

Directions

  1. For the filling: Cook vermicelli as directed; drain. Toss with vegetable oil and vinegar, lime zest, Sriracha, and a pinch of salt. Whisk the lime juice and vegetable oil; season with salt and pepper. Brush the pounded chicken with the lime oil; top with the noodles, carrots, red bell pepper and scallions and roll up.

  2. For grilling: Brush with sweet Thai chili sauce during the last 2 minutes of cooking.
