Ingredients
- For the filling: 1 oz. rice vermicelli
- 1 tbsp vegetable oil
- 1 tbsp rice vinegar
- 1 tsp lime zest
- 1 tsp Sriracha
- Pinch of salt
- Juice of 1 lime
- 2 tbsp vegetable oil
- Salt and pepper
- 1 carrot, cut into matchsticks
- 1/4 red bell pepper, sliced
- 1 scallion, sliced
- For grilling: 1/4 cup sweet Thai chili sauce
Directions

For the filling: Cook vermicelli as directed; drain. Toss with vegetable oil and vinegar, lime zest, Sriracha, and a pinch of salt. Whisk the lime juice and vegetable oil; season with salt and pepper. Brush the pounded chicken with the lime oil; top with the noodles, carrots, red bell pepper and scallions and roll up.

For grilling: Brush with sweet Thai chili sauce during the last 2 minutes of cooking.
