Ingredients
- For the filling:
- 3 slices bacon
- 2 tbsp bacon drippings
- 2 tbsp butter, melted
- 1 large buttermilk biscuit
- 2/3 cup shredded cheddar
- 2 tbsp chopped chives
- 2 tbsp chopped parsley
- 2 to 3 tbsp water
- Salt and pepper
- For grilling:
- 1/4 cup barbecue sauce

For the filling: Cook bacon in a skillet until crisp; crumble. Mix bacon drippings and melt butter. Crumble biscuit into a bnowl, then add the bacon, half of the drippings mixture, cheddar, chives and parsley. Stir in water; season with salt and pepper. Brush the pounded chicken with the remaining drippings mixture; top with the filling and roll up.

For grilling: Brush with barbecue sauce during the last 2 minutes of cooking.
