Ingredients
- 3/4 cup flour
- 1 tsp kosher salt
- 1/4 tsp baking powder
- 1/4 tsp black pepper
- 1/2 cup milk
- 2 eggs
- 2 cup corn
- 1/4 cup chopped cilantro
- 1/4 cup chopped scallions
- 1 jalapeno, chopped
- Zest and juice of 1/2 lime
- Olive oil, for frying
- Greek yogurt, for serving
Directions

Whisk flour, salt, baking powder and pepper in a bowl. Whisk milk and eggs in another bowl; stir in the flour mixture. Add corn, cilantro, scallions, jalapeno, lime zest and juice. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.
