Freeze Ahead Lemon Parfaits

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2 Tbsp. grated lemon rind
  • 1/4 cup lemon juice
  • 1/4 cup butter
  • vanilla ice cream
  • sweetened whipped cream

Directions

  1. Whisk together eggs, sugar, lemon rind and juice in small saucepan; add butter. Cook over low heat, stirring constantly , until smoothly thickened. Cool. Alternately spoon ice cream and lemon sauce into parfait glasses. start with lemon and end with lemon. ie lemon, ice cream, lemon, ice cream, lemon. Cover; freeze until firm. Remove from freezer to refrigerator 15- 20 minutes before serving. Top with whipped cream and garnish as desired. Makes 6 servings
