Creamy Potato Salad with Herbs

Ingredients

  • 2 1/2 lbs. small new potatoes, quartered
  • Kosher salt
  • 3 tbsp apple cider vinegar
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 tsp sugar
  • 3 hard-boiled eggs, peeled and chopped
  • 2 stalks celery, chopped
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill
  • Black pepper

Directions

  1. Put the potatoes in a large pot and add water to cover; season with salt. Bring to a boil, then reduce the heat to simmer until tender, 10 to 15 minutes. Drain and transfer to a large bowl. Add 1 tbsp vinegar and 1/2 tsp salt and toss. Let cool.

  2. Mix the mayo and sour cream, the remaining 2 tbsp vinegar and the sugar in a small bowl. Add to the potatoes along with the eggs, celery, chives, and dill; season with salt and pepper and toss.
