Ingredients
- 2 1/2 lbs. small new potatoes, quartered
- Kosher salt
- 3 tbsp apple cider vinegar
- 1/2 cup mayo
- 1/2 cup sour cream
- 1 tsp sugar
- 3 hard-boiled eggs, peeled and chopped
- 2 stalks celery, chopped
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh dill
- Black pepper
Directions

Put the potatoes in a large pot and add water to cover; season with salt. Bring to a boil, then reduce the heat to simmer until tender, 10 to 15 minutes. Drain and transfer to a large bowl. Add 1 tbsp vinegar and 1/2 tsp salt and toss. Let cool.

Mix the mayo and sour cream, the remaining 2 tbsp vinegar and the sugar in a small bowl. Add to the potatoes along with the eggs, celery, chives, and dill; season with salt and pepper and toss.
