Italian Deli Pasta Salad

Ingredients

  • Kosher salt
  • 1/3 cup mayo
  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 16 oz. jar giardiniera, drained and chopped
  • 5 oz. provolone, diced
  • 5 oz. salami, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Black pepper

Directions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook as directed. Drain and let cool to room temp.

  2. Meanwhile, mix the mayo, olive oil and red wine vinegar in a large bowl. Add the pasta and toss well. Add the giardiniera, provolone, salami, parsley, and basil; toss well and season with salt and pepper.
