Ingredients
- 4 beef tenderloin filets
- 1/2 cup Marsala wine
- 1 yellow onion, sliced thin
- 1/2 cup dry white wine
- 3 rosemary sprigs, chopped finely
- 1/2 cup beef broth
- Sprig of rosemary, for garnish
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- A dash of parsley, chopped finely
- 4 tbsp butter
- Salt and black pepper, to taste

Over medium heat in a large saute pan, heat the butter and oil. Add in the sliced onions, pepper and salt. Cook until caramelized for 10 minutes, stirring every now and then.

Add broth, wine, chopped rosemary and vinegar. Bring everything to a large boil. Decrease the heat and let simmer until the sauce is reduced by half, for 10 to 15 minutes.

Rub the beef filets with oil and then season with salt and pepper. Grill to prepared temp.

Place the grilled filets on a platter; top the filets with sauce. Garnish with rosemary and parsley. Serve and enjoy.
