Margherita Chicken

Ingredients

  • 3 roma tomatoes (finely diced)
  • 1 oz fresh basil (remove leaves from stems)
  • 4 chicken cutlets
  • 2 tsp Italian Seasoning
  • salt and pepper to taste
  • 1 C mozzerell Cheese
  • 12 oz angel hair or spaghetti
  • 5 tsp balsamic vinegar
  • 1/4 tsp sugar
  • 2 TBSP butter or margarine
  • 4 Tbsp garlic herb butter (can make your own)

Directions

  1. preheat oven to 425 degrees

  2. Boil water and cook noodles- reserve about 1/4 C pasta water.

  3. Season chicken with 1/2 of the Italian seasoning, salt and pepper. Heat a drizzle of olive oil in medium pan over medium heat and cook chicken until brown (2-3 min per side). Transfer to baking sheet, top with 1/2 of the mozzarella, and bake on top rack until chicken is cooked through (about 9-11 min).

  4. Heat drizzle of olive oil in pan over medium-high heat. Add tomato and remaining seasoning. Cook stirring until slightly softened (1-2 min). Stir in Vinegar and 1/4 tsp sugar. Simmer until mixture is slightly thickened (1 min). Remove from heat and stir in regular butter or margarine until melted. Stir in 1/2 the basil and season with salt and pepper. turn of heat.

  5. Over low heat, warm pan used to cook pasta. Stir in drained noodles, garlic butter, 1/4 cup pasta water and 1 Tbsp plain butter. Stir in remaining basil and season generously with salt and pepper.

  6. Slice chicken crosswise. Divide pasta onto plates and top with chicken. Spoon balsamic tomato over chicken and top with remaining mozzarella.
