Ingredients
- Taco:
- 1 lb. ground beef
- 1 oz. taco seasoning mix, divided
- 16 oz. can refried beans
- 2/3 cup water
- 12 crisp taco shells
- sour cream, for serving
- Guacamole:
- 2 avocados
- 2 tbsp diced onions
- 1 fresh lime, juiced
- Salt and pepper, to taste
- Assembling:
- 12 soft flour tortillas, about 7-inch diameter
- 2 cups shredded cheddar
- 1 cup shredded lettuce
- 1 large tomato, chopped
- 1/4 red onion, chopped
- 1/2 cup sour cream
- Salt and black pepper, to taste

eheat the oven to 350.

Cook the beef for 10 to 15 minutes over medium heat, sprinkling it with 3/4 oz. of the taco seasoning. When the beef is brown and crumbly, remove it from the heat and set aside.

Season the refried beans with the remaining taco seasoning by placing the beans, water, and seasoning in a small pot and mixing and mashing everything together. Mash the beans and bring the mixture to a simmer.

Heat the taco shells in the oven for 3 to 5 minutes.

While the taco shells are being heated, make the guacamole by mashing all the guacamole ingredients together.

To assemble the tacos, start by covering one side of each flour tortilla with 2 tbsp of bean mixture and wrapping the flour tortilla around a taco shell. Then place the following by layers inside the taco shell:

2 tbsp beef

2 tbsp cheese

Shredded lettuce

Chopped tomato and onion

Serve with guacamole and sour cream on the side.
