Ingredients
- 2 lbs. potatoes, peeled, quartered
- 2 oz. unsalted butter, at room temp
- 1/3 cup heavy cream
- 1/4 cup sour cream
- 4 oz. white cheddar, grated
- 1 tsp salt
- 1/2 tsp white pepper
Directions

Bring some water to a boil in a pot, then place the potatoes inside.

Keep the potatoes boiling until they are soft enough to mash with a fork.

When the potatoes are tender enough, transfer them to a large bowl and mash them with a fork, potato masher or electric mixer.

When no more chunks remain, add the butter and continue to mash until the butter gets mixed evenly into the potatoes.

Add the heavy cream and do the same.

Add the sour cream and continue mixing.

Slowly add in the cheese, mixing it thoroughly with the mashed potatoes.

Season the potatoes with salt and pepper and serve.
