Ingredients
- Breading:
- 3 cups self-rising flour
- 1 cup corn starch
- 3 tbsp seasoning salt
- 2 tbsp paprika
- 1 tsp baking soda
- 1 package dry Italian-style salad dressing mix
- 1 package dry onion soup mix
- 1 package dry spaghetti sauce spices and seasoning mix
- 3 tbsp white sugar
- Batter and Coating:
- 3 cups cornflakes cereal, crushed
- 2 eggs, beaten
- 1/4 cup cold water
- Chicken:
- 2 cups oil for frying
- 4 lb. whole chicken, cut into pieces
Directions

Mix all of the breading ingredients in a deep bowl.

Place the crushed cereal in another bowl.

In another bowl, beat the eggs and cold water together.

at the oil to 350 and preheat the oven to 350.

Dip the chicken into the breading mixture, the egg mixture, the crushed cereal, and then the breading mixture again.

Immediately place the breaded chicken into the heated oil and cook on each side for 3 to 4 minutes.

Place the chicken in a 9×13-inch baking pan skin-side up. Cover the baking pan with foil, leaving a small opening.

Bake the chicken for 45 minutes.

After 45 minutes, remove the foil and continue baking for another 5 minutes.

Remove the baking pan from the oven and serve.
