Cafe Rio’s Pork

Ingredients

  • For the Marinade:
  • 3 lbs. boneless pork loin
  • 12 oz. Coca Cola
  • 1/4 cup brown sugar
  • For the Seasoning:
  • 1 tsp garlic salt
  • 1 tsp onion salt
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 12 oz. Coca Cola
  • For the Sauce:
  • 12 oz. Coca Cola
  • 3/4 cup brown sugar
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 4 oz. can green chili, ground
  • 10 oz. can red enchilada sauce

Directions

  1. Mix the Coca Cola and sugar in an airtight container or Ziploc bag to make the marinade.

  2. Massage the marinade into the pork. Place it in the container to marinate for at least 8 hours.

  3. Place the pork into a slow cooker and cover with all of the seasoning ingredients in the order specified. Cook the pork on LOW for 7 to 9 hours.

  4. After cooking, shred the pork and remove the liquid from the slow cooker.

  5. Return the shredded pork to the slow cooker.

  6. Place all of the sauce ingredients in a food processor or blender. Blend well to create the sauce.

  7. Pour the sauce over the pork and then cook the entire mixture for another 30 minutes.

  8. Transfer to a bowl and serve.
