Ingredients

  • Sauce:
  • 2 tbsp olive oil
  • 6 fresh garlic cloves
  • 1/2 tsp chili flakes
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 cans (14.5 oz.) tomatoes
  • 1/4 cup fresh basil, chopped
  • 1/4 cup sweet creamy butter, cut into 1-inch cubes, chilled
  • 1/2 cup Parmesan, grated
  • Pasta:
  • 1 lb. gnocchi
  • Salt, to taste
  • Black pepper, to taste

Directions

  1. Place the olive oil, garlic, and chili flakes in a cold pan and cook over medium heat.

  2. When the garlic starts turning golden brown, add the wine and broth and bring the mixture to a simmer.

  3. After about 10 minutes, the broth should be halved. When that happens, add in the tomatoes and basil and then let the sauce continue simmering for another 30 minutes.

  4. Once the sauce has thickened, set it aside to cool for 3 minutes.

  5. After 3 minutes, place the sauce in a blender and add the butter and Parmesan. Puree eveyrthing together and set aside.

  6. Prepare the pasta by boiling the gnocchi in a large pot. When it is cooked, strain the pasta and mix with the sauce.

  7. Transfer everything to a plate and serve.
