Ingredients
- Sauce:
- 1/2 cup mayo
- 1 tbsp Dijon
- 3/4 tsp ketchup
- 1/4 tsp kosher dill pickle juice
- Pinch of cayenne pepper
- Burger:
- 4 potato burger buns
- 1/4 cup unsalted butter, melted
- 8 smoked bacon slices, cooked, halved
- 1/2 cup pickled red cherry peppers, diced
- 1 lb. very cold ground beef, shaped into patties
- 1 tsp kosher salt, divided
- 1/4 tsp black pepper, divided
- 4 slices American cheese
Directions

Thoroughly mix all the sauce ingredients in a small bowl.

Butter the insides of the buns and toast on a hot griddle for 2 to 3 minutes.

Remove the buns and heat the griddle for another 2 to 3 minutes while seasoning one side of each patty with salt and pepper.

Place the patties on the heated griddle, with the seasoned side facing the griddle. Use a spatula to squish the patties to 1/3-inch thick.

Sprinkle the unseasoned side of the patties with salt and pepper and leave to cook for 2 to 3 minutes.

When the patty juices are bubbling, flip them and place the cheese slices on top.

When the bottom sides of the patties are charred, transfer them from the griddle to the bottom burger bun.

Place the cherry peppers and bacon on top of the cheese and top everything off with the bun.

Secure the sandwich with a toothpick and serve.
