Ingredients
- 6 cups julienned carrots
- 4 sweet apples, julienned
- 1/4 cup lemon juice
- 2 tbsp sugar
- 1 1/2 tsp cinnamon
- 1/2 cup chopped pistachios
- 1/8 tsp salt
- 1/2 cup additional pistachios, for sprinkling
Directions

Combine carrots, apples, lemon juice, sugar, cinnamon, chopped pistachios and salt. Just before serving, sprinkle with additional pistachios.
