Ingredients
- 6 cups cauliflower florets
- 1/2 cup shredded Swiss
- 3 tbsp milk
- 1 tbsp butter
- Salt, pepper and garlic powder, to taste

In a large saucepan, bring 1 inch water to a boil. Add cauliflower; cook, covered, until very tender, 8-12 minutes. Drain; mash cauliflower, adding Swiss, milk, butter, salt, pepper and garlic powder.
