Roasted Cauliflower with Buttery Pecans

Ingredients

  • 2 head cauliflower, sliced vertically 1 inch thick
  • 1/4 cup olive oil, divided
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 tbsp unsalted butter
  • 1/2 cup chopped pecans

Directions

  1. eheat oven to 350. Spray 2 large rimmed baking sheets with cooking spray.

  2. On prepared pans, arrange cauliflower in a single layer. Drizzle with oil, and sprinkle with salt and pepper.

  3. Bake until tender and golden brown, 40 to 45 minutes, turning halfway through baking.

  4. In a small skillet, melt butter over medium heat. Add pecans; cook, stirring frequently, until toasted, 4 to 5 minutes. Spoon mixture onto cauliflower. Serve immediately.
