Ingredients
- 4 tbsp vegetable oil, divided
- 2/3 cup finely chopped onion
- 2 lbs. ground chicken
- 1/4 cup panko
- 1 1/2 tsp kosher salt
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- Slider buns and pickles, to serve
- White Barbecue Sauce (see recipe)
Directions

In a small skillet, heat 1 tbsp oil over medium heat. Add onion; cook until softened, about 6 minutes. Transfer to a large bowl; let cool for 2 to 3 minutes. Add chicken, panko, salt, paprika, garlic powder, and pepper; stir well. Cover and refrigerate for 1 hour. Divide mixture into 32 portions and roll into balls.

eheat oven to 350. Spray a large rimmed baking sheet with cooking spray.

In a large skillet, heat 2 tbsp oil over medium-high heat. Add meatballs in batches, and cook, gently turning occasionally, until browned, about 3 minutes; add remaining 1 tbsp oil, if needed. Place meatballs on prepared pan.

Bake until cooked through, about 15 minutes. Serve on buns with pickles and White Barbecue Sauce.
