Ingredients
- 1 tsp vegetable oil
- 1 cup finely chopped onion
- 3 lbs. ground chuck
- 2 cups panko
- 3 large eggs, lightly beaten
- 2 tbsp dried parsley
- 2 tsp dried Italian seasoning
- 2 tsp garlic salt
- 1 tsp black pepper

eheat oven to 350. Line a large rimmed baking sheet with foil. Place a wire rack on prepared pan; spray rack with cooking spray.

In a small skillet, heat oil over medium heat. Add onion; cook, stirring occasionally, until tender, about 5 minutes. Let cool for 15 minutes.

In a large bowl, stir together onion, ground chuck, panko, and all remaining ingredients until well combined. Shape mixture into 2-inch balls; place on prepared rack on pan.

Bake until cooked through, about 25 minutes. Let cool completely. Freeze in a heavy-duty Ziploc bag for up to 1 month.
