Ingredients
- 2 Persian cucumbers, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup white vinegar
- 1/4 cup water
- 1/2 tsp mustard seeds
- 1/2 tsp kosher salt
- 1/2 tsp sugar
- 1/2 tsp pepper
- 3 cups shredded rotisserie chicken
- 1 cup barbecue sauce
- 1 tbsp Dijon
- 8 Hawaiian slider buns
- Cilantro, for serving
Directions

Toss cucumbers and red onion with vinegar, water, mustard seeds, sugar, kosher salt, and pepper; let stand 30 minutes. Combine chicken, barbecue sauce, and Dijon in a large skillet, and cook tossing, until hot, about 4 minutes. Spread mustard on buns; fill with the chicken. Top with the cucumber mixture and cilantro.
