Ingredients
- 12 new potatoes, pierced with a fork in several areas
- 16 slices pepperoni, finely chopped
- 1 1/2 oz. grated mozzarella
- 2 tbsp grated Parmesan
- 1 tbsp canola oil
- 2 tbsp finely chopped roasted red peppers
- 2 tsp dried basil leaves
- 1/8 tsp dried pepper flakes
Directions

Place potatoes on a microwave-safe plate, cover, and cook on HIGH 10 minutes or until tender.

Meanwhile, combine the remaining ingredients in a small bowl, fluff with a fork.

Remove potatoes from microwave and let stand 10 minutes for easier handling. Cut potatoes in half lengthwise, place potato halves, cut side up, on 2 microwave-safe dinner plates, spoon equal amounts of the pepperoni mixture on each potato half. Working with one plate at a time, microwave on HIGH for 1 to 2 minutes or until cheese is melted slightly. Let stand 3 minutes before serving. Serve warm.
