Apple-Pecan Pumpkin Coffee Cakes

Ingredients

  • Cakes:
  • Cooking spray
  • 15 oz. box yellow cake mix
  • 1/4 cup canola oil
  • 2/3 cup water
  • 6 large egg whites
  • 1 cup solid pumpkin
  • 1 1/2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Topping:
  • 4 cups diced apples
  • 1/2 tsp ground nutmeg
  • 4 oz. chopped pecans
  • 1/4 cup brown sugar

Directions

  1. eheat oven to 325. Coat bottom only of two nonstick 9-inch round cake pans with cooking spray.

  2. In a large bowl, combine the cake ingredients and prepare as directed. Spoon batter into the pans and top with the apples; sprinkle 1/2 tsp nutmeg and pecans evenly over all.

  3. bake for 25 minutes or until wooden pick inserted in center comes out clean. Place pan on cooling rack, sprinkle evenly with brown sugar, and cool completely. Cut into wedges.
