Ingredients
- Spread:
- 2 oz. shredded mozzarella
- 12 pitted kalamata olives, finely chopped
- 2 medium garlic cloves, minced
- 1 1/2 tsp chopped fresh oregano
- Filling:
- 8 slices mulitgrain bread
- 4 tsp Dijon
- 12 large basil leaves
- 2 medium tomatoes, cut into 4 slices each
- 1 tbsp canola oil
Directions

In a small bowl, combine the spread ingredients and set aside.

Place four bread slices on a clean work surface. Top each bread slice with equal amounts of the cheese mixture, 3 basil slices, and 2 tomato slices. Spread one side of the remaining bread slices with the mustard and place mustard side down on top of the tomatoes.

Heat the oil in a large nonstick skillet over medium heat. Place the sandwiches in the skillet and cook 2 to 3 minutes on each side, or until golden.
