Ingredients
- 4 cups water
- 2 medium Yukon gold potatoes, diced
- 1/2 cup diced green pepper
- 1/3 cup diced onion
- 1/4 cup diced celery
- 1/3 cup mayo
- 1 tbsp cider vinegar
- 2 tsp prepared mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Directions

Bring water to a boil in a medium saucepan. Add potatoes, return to a boil, reduce heat, and simmer, uncovered 4-5 minutes or until potatoes are just tender.

Meanwhile, in a medium bowl, combine remaining ingredients and set aside.

Drain potatoes in a colander and run under cold water until completely cooled. Shake off excess water and stir into the green pepper mixture.

Serve within 1 hour for peak flavors.
