Mustard Potato Salad

Ingredients

  • 4 cups water
  • 2 medium Yukon gold potatoes, diced
  • 1/2 cup diced green pepper
  • 1/3 cup diced onion
  • 1/4 cup diced celery
  • 1/3 cup mayo
  • 1 tbsp cider vinegar
  • 2 tsp prepared mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Bring water to a boil in a medium saucepan. Add potatoes, return to a boil, reduce heat, and simmer, uncovered 4-5 minutes or until potatoes are just tender.

  2. Meanwhile, in a medium bowl, combine remaining ingredients and set aside.

  3. Drain potatoes in a colander and run under cold water until completely cooled. Shake off excess water and stir into the green pepper mixture.

  4. Serve within 1 hour for peak flavors.
