Rib Eye Steaks with Chili Butter

Ingredients

  • 1/2 cup butter, softened
  • 2 tsp chili powder
  • 1 tsp minced garlic
  • 1 tsp Dijon
  • 1/8 tsp ground red pepper or chipotle chile pepper
  • 1 tsp black pepper
  • 4 beef rib eye steaks
  • Salt

Directions

  1. Beat butter, chili powder, garlic, mustard and red pepper in medium bowl until smooth. Place mixture on sheet of waxed paper. Roll mixture back and forth into 6-inch log using waxed paper. If butter is too soft, refrigerate up to 30 minutes. Wrap in waxed paper; refrigerate at least 1 hour.

  2. Oil grid. Prepare grill for direct cooking. Rub black pepper over both sides of steaks.

  3. Grill steaks, covered, over medium-high heat 8 to 10 minutes or until desired doneness, turning occasionally. Season with salt; serve with slices of Chili Butter.
