Ingredients
- 1/3 cup chicken broth
- 2 tbsp lemon juice
- 2 tbsp Dijon
- 1 tsp minced fresh tarragon
- 1 1/2 to 2 lbs. boneless pork loin
- 1 tsp ground paprika
- 1/2 tsp black pepper

Combine broth, lemon juice, mustard and tarragon in small bowl; mix well. Sprinkle pork with paprika and pepper; place in slow cooker. Spoon mustard mixture evenly over pork. Cover; cook on LOW 6 to 8 hours.

Remove pork from slow cooker; let stand 15 minutes before slicing.
