Ingredients
- 2 to 2 1/2 lbs. pork shoulder roast, trimmed
- 2 bay leaves
- 2 garlic cloves, minced
- 1 tsp chili powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 cup water
- Guacamole (see recipe) or salsa

eheat oven to 350. Cut pork into 1-inch cubes.

Combine bay leaves, garlic, chili powder, salt, pepper, oregano, and cumin in a small bowl; stir in water until well blended. Place pork in shallow roasting pan. Pour spice mixture over pork; turn to coat. Cover with foil.

Bake 45 minutes. Remove foil; bake 45-60 minutes or until most of the liquid has evaporated and pork begins to brown. Remove and discard bay leaves. Pull pork into large shreds or chunks. Meanwhile, prepare Guacamole. Serve with pork.
