Ingredients
- 1 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 lb. pork tenderloin
- 1 tbsp olive oil
- 2 medium tomatillos, husked and diced
- 1/2 ripe medium avocado, diced
- 2 tbsp finely chopped red onion
- 1 to 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- 1 jalapeno, seeded and finely chopped
- 1 garlic clove, minced
- 1/8 tsp salt
- 4 lime wedges
Directions

eheat oven to 425. Line rimmed baking sheet with foil.

Combine chili powder and cumin in small bowl. Sprinkle mixture over pork, pressing to adhere.

Heat oil in large skillet over medium-high heat until hot. Add pork; cook 3 minutes per side or until well browned. Place on prepared baking sheet.

Roast 20-25 minutes or until barely pink in center. Remove to cutting board; let stand 5 minutes before slicing.

Combine tomatillos, avocado, onion, cilantro, lime juice, jalapeno, garlic and salt in medium bowl; toss gently to blend. Serve pork with salsa and lime wedges.
