Ingredients
- 1 1/2 lbs. ground lamb
- 1 tbsp minced garlic
- 2 tsp Greek seasoning
- 1 tsp paprika
- 1/2 tsp salt, divided
- 1/2 tsp black pepper
- 4 thin slices red onion, separated into rings
- 1 tbsp olive oil
- 1 tsp chopped fresh mint or parsley
- 1 tsp red wine vinegar
- Spinach leaves
- 4 to 8 tomato slices

Oil grid. Prepare grill for direct cooking.

Combine lamb, garlic, Greek seasoning, paprika, 1/4 tsp salt, and pepper in large bowl; mix lightly but thoroughly. Shape into 4 patties. Cover and refrigerate.

Combine onion, oil, mint, vinegar and remaining 1/4 tsp salt in small bowl; toss to coat.

Grill patties, covered, over medium heat 8 to 10 minutes until cooked through, turning occasionally.

Serve burgers over spinach; top with tomatoes and onion mixture.
