Ingredients
- 1 medium avocado, peeled and diced
- 1 cup chopped onion
- 1 cup chopped peeled seeded cucumber
- 1 Anaheim pepper, seeded and chopped
- 1/2 cup chopped fresh tomato
- 2 tbsp chopped fresh cilantro, plus additional for garnish
- 1/2 tsp salt
- 1/4 tsp hot pepper sauce
Directions

Combine avocado, onion, cucumber, Anaheim pepper, tomato, 2 tbsp cilantro, salt and hot pepper sauce in medium bowl; mix gently. Cover and refrigerate at least 1 hour before serving. Garnish with additional cilantro.
