Ingredients
- 1 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp ground red pepper
- 3 bone-in chicken breasts
- 1 onion, chopped
- 3 garlic cloves, minced
- 1/3 cup canned unsweetened coconut milk
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp water
- 1 tbsp cornstarch
- 3 cups hot cooked couscous
- 1/4 cup chopped fresh cilantro
- Lime wedges
Directions

Combine ginger, salt, and ground red pepper in a small bowl; sprinkle over chicken. Place onion and garlic in slow cooker; top with chicken. Stir coconut milk, peanut butter and soy sauce in a small bowl; pour over chicken. Cover; cook on LOW 6-7 hours. Remove chicken to serving bowl. Cover loosely with foil.

Stir water into cornstarch in small bowl until smooth; whisk into slow cooker. Cover; cook on HIGH 15 minutes or until sauce is slightly thickened. Spoon sauce over chicken. Serve chicken over couscous; top with cilantro. Garnish with lime wedges.
