Ingredients
- 1/4 cup salted butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 1/2 cups shredded Colby Jack
- 4.5 oz. can chopped green chiles
- 1/2 tsp table salt
Directions

Melt butter in heavy saucepan over medium-low; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Increase heat to medium. Gradually whisk in milk; cook, whisking constantly, until thickened, 5 minutes. Remove from heat and whisk in cheese, green chiles and salt. Use immediately.
