Pasta with Artichokes, Tomatoes & Cannellini Beans

Ingredients

  • whole wheat pasta (your choice)
  • 1 can artichokes
  • 1 28-oz. can diced tomatoes
  • 1 can cannellini beans
  • 1/2 Tbsp. olive oil
  • garlic (minced)

Directions

  1. While pasta is cooking, heat oil in a saucepan and sauté the minced garlic.

  2. Add diced tomatoes, beans, and artichokes and mix around a lot.

  3. Bring mixture to a near boil and let simmer until pasta is ready to go.

  4. Drain pasta and top with sauce.
