Ingredients
- 2 ears of corn
- 1 egg
- 1/4 cup flour
- 1/4 cup grated Parmesan
- 1/4 cup chopped basil
- 1 tbsp cornstarch
- 1/2 tsp kosher salt
- Black pepper
Directions

Cut the kernels off corn. Pulse half the corn and egg in a food processor, then transfer to a bowl. Mix in the remaining corn, flour, grated Parmesan, chopped basil, cornstarch, kosher salt and black pepper. Cook spoonfuls in an oiled skillet until golden, 3 to 4 minutes per side.
