Kisir (Veggie Bulgur Salad)

Ingredients

  • 1 cup bulgur
  • 1 cup boiling water
  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 2 large tomatoes, finely chopped
  • 1 cucumber, chopped
  • 3 bell peppers, finely chopped
  • 1 cup finely chopped green onion
  • 1/2 cup minced fresh parsley
  • 1/2 cup minced fresh mint
  • 1 tsp crushed red pepper, or to taste
  • 1/2 tsp salt
  • 3 tbsp fresh lemon juice
  • 2 tbsp pomegranate molasses

Directions

  1. Put bulgur in a large bowl; stir in boiling water. Let stand, covered, until water is absorbed and bulgur is tender, about 20 minutes.

  2. Meanwhile, heat 2 tbsp olive oil in a large skillet over medium heat. Add onion; cook, stirring, until onion is softened and translucent, about 5 minutes.

  3. Add cooked onion, tomatoes, cucumber, bell peppers, green onion, parsley, mint, crushed red pepper and salt to bowl with bulgur. Drizzle with lemon juice, pomegranate molasses and remaining 2 tbsp oil. Toss gently until thoroughly combined.
